Carrageenans are extracted from certain seaweed types belonging to the Rhodophyceae family know as Red Seaweed. Carrageenans are widely used in the food industry because of their thickening, gelling, and emulsifying properties. Their main applications are in dairy and meat products. They create a strong bind to food proteins. Carrageenans are extracted from the seaweed by three different types of processing; alcohol precipitation, gel press (KCl precipitation), and Natural-Grade/semi-refined method. There are four general carrageenan types: kappa, iota, lambda and kappa-2.

Carrageenan SI-100 is a concentrated, highly refined iota carrageenan designed to be a versatile performer in imitation chocolate milks (combined with a suitable kappa carrageenan), low-fat ground meats and as a general purpose suspension and emulsion stabilizer. SI-100 is a pure iota carrageenan product designed primarily for lightly-gelled dairy products and ground meat. SI-100 is Non-GMO and is Kosher and HALAL certified.
Characteristics
Carrageenan SI-100 is cream to light tan in color. Powder Particle size is 90% through 80 Mesh. Typical use is .05-.08% (500 - 800 ppm) by weight of final product in imitation milks and 0.5% in low fat ground meats. Typically used with a kappa carrageenan such as CM-61BF.
