CI Baking Powder is a Double Acting Baking Powder is manufactured and packaged by Corbion Caravan in bulk 50-pound bags. 

Double Acting Baking Powder is used as a standard-industry, general broadened leavening system. It is a mixture of a carbonate or bicarbonate and a weak acid. Baking Powder increases volume and lightens texture of baked goods and is a dry chemical leavening agent. It works by released carbon dioxide gas into a batter or dough through an acid-based reaction, causing bubbles to expand and soften the mixture. Baking Powder is used instead of yeast for end-products where fermentation flavors are not wanted.

CI Baking Powder is certified by Kosher by the Orthodox Union. It is within the code of Federal Regulations (CFR) under 182.1087, 184.1736, and 182.1217. It is also GRAS in 21 CFR. 

Characteristics 

CI Double Acting Baking Powder is a fine white, free flowing powder. It has a pH value between 6.25 and 7.25.
